Dining at Carbon KL has been hands down the most memorable meal in recent years for us, thanks to Chef David and his team. We all know the literal meaning of omakase – “I leave it up to you”. Omakase is not something you can choose from the menu. Instead, it’s an activation code for – I trust you, Chef, surprise me, show me what you’ve got!
Now, we would say that this dining experience has been “MORE OMAKASE THAN OMAKASE”, as we literally stepped into the restaurant not even knowing the theme and the menu of the restaurant, despite having googled beforehand. It’s truly a blind-date with the restaurant. And a really awesome one!

Stepping into the restaurant gives a warm and relaxing ambience, heightened by the inviting aroma of carbon firewood lingering in the air.

Chef David graciously shared with us the thoughtful curation process behind this exceptional dish. The team, with a keen understanding of flavour harmony, carefully selected 3 main ingredients to complement each other seamlessly.
We truly appreciate the fact that the remarkable generous amount of caviar served here is not merely a decorative flourish but a deliberate choice to play an important role in this culinary composition.

Sabahan Baby Octopus, Pickled Verde, Saffan Aioli, Smoked Pepperonata
Kailan & Melon, Pickled Bunashimeiji, Aswad’s Ponzu
I’ll describe this as a fun dish, even for the boys. It feels like the kind of salad you have on a long summer vacation.
The char-grilled kailan brought a smoky depth that perfectly compliments the crisp freshness of the watermelon and the sweet pickled bunashimeiji. It’s a win for us!

Aged Duck Breast, Beetroot Puree, Kale Chip
The star of the show!
While we do understand duck meat isn’t for everyone, one of our Expats Malaysia team member who typically averse to duck due to its “gamey flavour and resemblance to taste of liver” surprised all of us by rating this particular dish at 15/10!
The skin was expertly roasted to a perfect crunch, providing a delightful contrast to the tender and juicy meat beneath. The balance achieved was brilliant – not too much fat, not too much lean meat.

Semi Freddo Of Tonka Beans & Fresh Kuih Kapit
Definitely an interesting dessert worth mentioning. This cheeky one caught us off guard with a thin layer of “chilli jam” hiding in between the Semi Freddo, the nutty pistachio crumbs and and the kuih kapit. Had a tiny shock at first, but did not hate it at all.
In fact, personally I couldn’t help but think that this would go rather well with a glass of scotch whisky.

Tartlet Of Chocolate & Spiced Wine Poached Pears, Cranberry Chocolate Pearls
Just when we thought we couldn’t be impressed any further. I’ll say it. This is by far the best dessert I’ve had in my life. (no exaggeration) It’s a shame I stuffed the whole thing into my eager mouth, denying me a chance to take a look at what is inside of this extraordinary tart.
What I can vividly describe is the sensation of the creamiest spiced wine “mousse”, a true unique and divine revelation of flavour and texture.
I would happily splurge on these tarts, anytime anywhere. Take my money!
